Josh Cheese Stick

Ingredients :

1/3 c. butter (buttermilk), softened
1 (180g.) grated cheese (i use eden regular cheese)
1 cup all purpose flour
1/2 tsp baking powder
1/2 cup sugar
1 egg, beaten

Preheat oven to 350F. Put a wax paper into a baking sheet and put it aside. Beat the butter and sugar until fluppy. Add in the flour, cheese and baking powder, mix well until dough is formed. Get about 1 tsp full of dough, first form into a ball then form into a stick (about 3 inches) by rolling it in between your palm. Line the cheese stick in the baking sheet about 1 inch apart and bake it for 10 minutes then brush the sticks with beaten egg. Bake for another 5 minutes or until light brown. Remove from the pan right away to avoid paper wax to stick.

My kids loved it... and so is my husband... additional pambaon recipe.

Cassava-coconut Roll

I always make pichi pichi as a snack for my family because the ingredients are affordable and it's easy to make. Since my family loves it, i thought of another recipe using almost same ingredients and here is what i came up with... I call it "cassava-coconut roll"

Ingredients :

2 cups of grated cassava
1 cup of white sugar
1 tbsp pandan extract
1/2 tsp lihia
1 1/2 cup water
2 cups of grated coconut
2 cups of brown sugar

Procedure :

Mix the grated coconut with brown sugar and a little amount of water. Let it boil until dried, mix it constantly. Then set aside.

In a bowl, mix cassava, white sugar, lihia, pandan extract and water. Mix it well until sugar is well dissolved. Spread about 3 table spoons of the mixture into the banana leaf as shown in the picture below






Put it on top of each other to avoid sticking.



Steam it for 15-20 minutes. Let it cool for few minutes then spread the sweetened coconut to the cassava and roll it. Sprinkle some sweetened coconut before serving.

Cassava Cake



Ingredients :

1 kilo or 2 pack grated cassava
1 1/2 cup granulated
50 g. cheese
1 can coconut milk
1 can evap milk
1 can condenced milk
200 g. butter (melted)
buco (optional)

Procedure :

1. Mix all ingredients except the cheese and 1/3 part the condensed milk.
2. Preheat the oven to 350F.
3. Bake it for 45 minutes and brush it with the remaining condensed milk.
4. Bake it for another 25 minutes or more depending on the thickness.
4. Top it with cheese.

Pichi Pichi



I got this recipe from a book but thanks to my friend Macky Ilagan who taught me easier way to cook pichipichi without the hassle of steaming. You can use the microwave if you are not so conscious with your electric consumption.

Ingredients

2 cups of grated cassava (1 pack of frozen cassava from asian store)
2 cups of white sugar
2 cups of pandan water or 2 tbsp of pandan extract (caraville brand)
>for the pandan water just boil pandan leaves until desired flavor is extracted)
1 tsp of Lye Water
Grated coconut for garnish

PROCEDURE

Combine all ingredients except the coconut in a microwavable container.

Microwave for 5 minutes under the highest level. Stir and set it for another 5 minutes then another 2 minutes and stir.. reapeat it for last 2 minutes.



However, if you prefer to use steamer to save energy you can pour the mixture into 9 inch round pan then steam for 45 minutes.

Let it cool and form into balls and roll in a grated coconut.



Enjoy merienda.
